Carrot Salsa

chopped tomatoes

apple cider vinegar

brown sugar

chopped onion

–½ cup chopped jalapeño peppers*

teaspoon
salt

teaspoon
black pepper
or to taste

chopped cilantro
optional
Instructions
Combine all ingredients except cilantro (if using).
Bring to a boil over medium heat, stirring occasionally.
Boil gently until thickened, approximately 45 minutes.
Ladle into clean jars.
Process in boiling-water bath for 15 minutes.
Note: This salsa is almost a relish and is delicious served with meats or on crackers or chips.
Notes & Wine Advice
*Wear rubber gloves when chopping hot peppers to avoid skin irritation.
