Ingredients

  • 1/2 cup almond flour
  • 1/2 cup erythritol sweetener
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon pumpkin pie spice
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 1/4 cup pumpkin purée
  • 1/4 teaspoon vanilla extract
  • 2 1/4 tablespoons butter melted
  • 2 large eggs
  • 1/4 cup walnuts crushed
  • Olive oil for greasing

Instructions

  • Preheat the air fryer to 190°C for 3 minutes.
  • Combine the almond flour, erythritol, baking powder, pumpkin pie spice, nutmeg, and salt in a large bowl.
  • Combine the pumpkin purée, vanilla extract, melted butter, and eggs in a medium bowl.
  • Pour the wet ingredients into the dry ingredients.
  • Mix gently until just combined.
  • Fold the crushed walnuts into the batter without overmixing.
  • Lightly grease 6 silicone cupcake liners with olive oil.
  • Divide the batter evenly between the cupcake liners.
  • Place the liners in the air fryer basket.
  • Air fry for 7 minutes until the muffins are set and lightly golden.
  • Transfer the muffins in their liners to a cooling rack.
  • Allow to cool for 5 minutes before serving.
