Equipment

Ingredients

  • 4 ripe pears peeled, cored, and halved
  • 750 ml red wine e.g., Merlot or Cabernet Sauvignon
  • 150 g granulated sugar
  • 1 cinnamon stick
  • 3 cloves
  • 2 star anise
  • 1 orange zest and juice
  • 1 lemon zest and juice

Instructions

  • In a large saucepan, combine red wine, sugar, cinnamon stick, cloves, star anise, orange zest and juice, and lemon zest and juice.
  • Bring the mixture to a simmer over medium heat, stirring until sugar dissolves.
  • Add the pear halves to the simmering liquid.
  • Reduce heat to low, cover the saucepan, and simmer for 25-30 minutes, or until pears are tender but still firm.
  • Remove pears from the liquid and set aside.
  • Increase heat to medium-high and simmer the poaching liquid for 10-15 minutes, or until it reduces and thickens slightly.
  • Pour the reduced liquid over the pears.
  • Serve warm.

Serving Tip:

Serve warm with a dollop of vanilla ice cream or whipped cream.

Wine Advice:

The same red wine used for poaching, or a sweet dessert wine like a late-harvest Gewürztraminer.
