1medium butternut squashpeeled, seeded, and cubed
1small yellow onionchopped
1tablespoonextra-virgin olive oil
1teaspoonfreshly ground black pepper
1teaspoonground cumin
1⅓clovesgarlicminced
1⅓teaspoonssea salt
4cupsvegetable broth
Instructions
Heat the olive oil in a large saucepan over medium heat.
Add the chopped onion.
Cook for 3 to 4 minutes until softened.
Stir in the garlic.
Add the butternut squash, vegetable broth, white beans, sea salt, cumin, coriander, and cayenne pepper.
Bring to a boil.
Reduce the heat to low.
Cover and simmer for 35 to 40 minutes until the squash is tender.
Carefully blend the soup in batches until smooth.
Return the soup to the saucepan.
Season with freshly ground black pepper.
Serve hot.
