Instructions
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Prepare the Chorizo:
Thread each slice of chorizo onto the soaked wooden skewers, creating "lollipops."
Make the Glaze:
In a small bowl, whisk together honey, balsamic vinegar, olive oil, smoked paprika, and red pepper flakes.
Glaze the Chorizo:
Place the chorizo lollipops on a baking sheet lined with parchment paper.
Brush each chorizo round generously with the prepared glaze, reserving some for basting.
Bake in the Oven:
Bake in the preheated oven for 15-20 minutes or until the chorizo is crispy around the edges.
Baste and Garnish:
During the last 5 minutes of baking, baste the chorizo lollipops with the remaining glaze for extra flavor.
