Instructions
Before you do anything set the oven to 450 F.
Grease a casserole dish with oil or cooking spray.
Get a large mixing bowl: Toss the mushrooms, broccoli, spinach, pepper, and onion in it.
Add 1 tbsp of olive oil, salt, pepper and toss them again.
Spread the veggies in the greased dish and cook it in the oven for 10 min.
Cook the pasta until it becomes dente.
Drain the pasta and set it aside.
Get a large mixing bowl: Mix 1 tbsp of olive oil with baked veggies, pasta, herbs and mozzarella cheese.
Spread the mix back in the casserole dish.
Sprinkle the cheese on top then cook it for 20 min.
Serve it warm and enjoy.
