Notes & Wine Advice
Recipe Notes
Both canned and fresh corn work well in these fritters. If using canned corn, drain it thoroughly before adding it to the batter. Too much moisture can make the fritters softer. The batter should be thick enough to hold its shape. Flatten each fritter slightly so the centre cooks evenly while the outside becomes golden.Do not overcrowd the air fryer basket. Cooking the fritters in batches allows the hot air to circulate properly and produces a crisper result.
Storage Advice
Store leftover corn fritters in an airtight container in the refrigerator for up to 3 days. Reheat them in the air fryer at 180°C for a few minutes until hot and crisp. You can also freeze the cooked fritters for up to 2 months. Thaw them in the refrigerator before reheating.
Wine Advice
Serve these corn fritters with a fresh Sauvignon Blanc. Its lively acidity works beautifully with the sweet corn, fresh parsley and green onions, while its freshness balances the smoky paprika and crisp fried exterior.
