Instructions
Blanch the Pork Belly
Bring a pot of water to a boil.
Blanch the pork belly for 10 to 13 minutes.
Remove and pat dry with a kitchen towel.
Prepare the Pork Belly
Using a fork, poke holes all over the pork belly skin.
Mix the garlic, shallot powder, sea salt, dried herbs (basil, oregano, thyme, marjoram), and ground black pepper to make a rub.
Massage the rub all over the pork belly.
Drizzle lime juice over the meat.
Refrigerate for 3 hours to marinate.
Cook the Pork Belly
Preheat the air fryer to 320°F (160°C).
Place the pork belly in the air fryer and cook for 35 minutes.
Increase the temperature to 360°F (180°C) and cook for an additional 20 minutes, until crispy and golden brown.
Serve
Slice the pork belly and serve warm.
