Instructions
In a large pot, bring the beef stock to a boil.
Add the finely chopped lemongrass and light soy sauce to the boiling stock.
Add the broken vermicelli noodles to the pot and simmer for about 6 minutes, or until the noodles are just tender.
Once the noodles are cooked, ladle the fragrant lemongrass beef noodle soup into serving bowls.
