Hickory Nut Cake
These nuts from the trees that grow wild on the fencerows flavor cakes as well as pies. The beaten egg whites (eggs were generally in good supply on the farm) make this an airy dessert.

Ingredients

butter or margarine
softened

granulated sugar

flour
▢

baking powder

milk

vanilla

hickory nuts
▢

egg whites
beaten until stiff
Instructions
Cream butter or margarine and sugar together.
Mix together flour and baking powder.
Add dry ingredients alternately with milk to creamed butter and sugar.
Blend in vanilla.
Stir in nuts.
Fold in egg whites.
Bake in 2 greased and floured cake pans at 350° for 30 minutes.
