Notes & Wine Advice
Recipe Notes
Cassava flour is naturally gluten-free and helps provide structure to the pizza bread. If necessary, tapioca flour can be used as an alternative, although the final texture may be slightly different. If gluten is not a concern, plain flour can also replace the cassava flour.Allow the pizza bread to rest for 5 minutes after cooking. This helps it firm up and makes it easier to cut into neat strips.Serve with warm no-added-sugar napolitana sauce for dipping. The bread is best served while the mozzarella and Parmesan are still warm.
Wine Advice
A fruity Sangiovese pairs well with the pepperoni, mozzarella, Parmesan, Italian herbs, and tomato-based dipping sauce. Its acidity works particularly well with the richness of the cheese and pepperoni.
