Ingredients

finely chopped red onion

lemon zest

white vinegar

3-ounce liquid pectin
Instructions
In a large saucepan, combine all ingredients except pectin.
Bring to a full rolling boil, stirring often.
Stir in pectin and boil hard for 1 minute, stirring constantly.
Ladle into clean jars and process for 10 minutes in boiling-water bath.
