Red Potato and Asparagus Salad
Here is another healthy but filling salad recipe for all those who are trying to eat healthy while trying to lose weight.

Ingredients

Trimmed and Cooked Asparagus Spears

Cup
Boiled and Chopped Red Potatoes
▢
1/3
Cup
Chopped Chives
▢
1/3
Cup
Lemon Juice
▢
1/4
Cup
Olive Oil
▢
Salt and Pepper to Taste
▢
Cayenne Pepper to Taste
Instructions
In a large bowl, toss together asparagus, potatoes and chives.
In a small bowl, whisk together, olive oil, lemon juice and spices.
Drizzle the dressing on top of the mixture that we prepared in Step 1.
Mix so that everything is coated evenly.
Refrigerate for 1 hour to allow the flavours to sink in.
