Instructions
Bring 7 cups of water to a boil in a medium saucepan over high heat.
Add the ramen noodles and cook for 3 minutes or according to the package directions.
Drain the noodles thoroughly and set them aside.
Cook the frozen broccoli in the microwave according to the package directions.
Heat the sesame oil in a large skillet over medium-low heat.
Add the garlic and ginger and sauté for 1 minute without allowing them to brown.
Stir in the soy sauce, peanut butter, Thai sweet chili sauce, lime juice, and water.
Cook the peanut sauce for approximately 2 minutes while stirring until smooth and heated through.
Add the bell pepper, green onions, cilantro, broccoli, and drained noodles.
Toss until the noodles and vegetables are evenly coated with the sauce.
Divide the noodles among four bowls.
Garnish with the chopped peanuts and serve immediately.
