Spinach & Feta Pastry Twists are crispy air fryer pastries filled with spinach, feta, and Parmesan. Golden and flaky with a savory cheese filling, they're perfect as a snack, appetizer, or party bite.
Place the thawed spinach in a fine sieve and squeeze out as much excess liquid as possible.
Coarsely chop the spinach and pat it dry with paper towels.
Place one puff pastry sheet on a parchment-lined tray.
Spread half of the spinach over the pastry and sprinkle with half of the feta and Parmesan.
Place the second pastry sheet on top.
Add the remaining spinach, feta, and Parmesan.
Cut the pastry stack in half and place one half on top of the other.
Press the layers together firmly.
Place the pastry in the freezer for 5 minutes to firm up.
Cut crossways into 24 strips.
Pinch one end of each strip and twist from end to end until approximately 20 cm long.
Pinch the other end to seal.
Preheat the air fryer to 200°C for 3 minutes.
Lightly coat the air fryer basket with cooking spray.
Arrange half of the pastry twists in the basket without overcrowding.
Air fry for 5 minutes until golden brown and cooked through.
Transfer to a wire rack to cool slightly.
Repeat with the remaining pastry twists.
Serve warm or at room temperature.

Squeeze as much liquid as possible from the thawed spinach. Excess moisture can make the puff pastry soft instead of crisp and flaky.Chilling the layered pastry for 5 minutes makes it firmer and much easier to cut and twist neatly.Don't overcrowd the air fryer basket. Leave enough space between the twists for hot air to circulate and cook them evenly.Store cooled pastry twists in an airtight container for up to 3 days. Reheat briefly in the air fryer to restore their crisp texture.
