Sweet-Hot Pork
Fully cooked pork roast is available in most supermarkets, but if you can find another more economical pork cut, substitute it. Look for a brand of pork that has au jus on the label. This is the fancy name for the delicious pork cooking liquids.

Ingredients

16 to 17 ounces pork roast au jus

teaspoon
medium-hot chili powder
▢

jar
12 ounces mild to medium salsa
▢
1/4
cup
apricot jam
or orange marmalade
▢

cups
cooked rice
Instructions
Drain the liquid off the pork, pouring the liquid into a skillet.
Cut the meat into 1-inch chunks.
Add the chili powder, salsa, and jam to the skillet and stir well.
Add the pork chunks.
Simmer over low heat 5 minutes, or until hot, stirring occasionally.
Serve over rice.
