Instructions
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the beaten eggs and scramble until just cooked.
Transfer the eggs to a plate.
Add the remaining vegetable oil and butter to the pan.
Cook the onion, carrots, and peas for about 3 minutes until slightly tender.
