Zesty Shrimp and Orzo Salad

Ingredients

orzo pasta
uncooked

asparagus
trimmed and cut into bite-size pieces

cooked medium shrimp

green onions
thinly sliced

fresh parsley

Italian salad dressing to taste
Instructions
Cook the orzo according to package directions.
Drain and rinse with cold water.
Place the asparagus in a large saucepan of simmering water for 3 to 4 minutes.
Drain and rinse with cold water.
In a serving bowl, mix together the cooked orzo, blanched asparagus, cooked shrimp, sliced green onions, and chopped fresh parsley.
Drizzle the salad with Italian salad dressing to taste.
Toss the ingredients together until well mixed.
