Ingredients

  • 1 tablespoon reduced-sodium soy sauce
  • 1 teaspoon chile-garlic or curry sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons toasted sesame oil
  • 1/2 lb. boneless skinless chicken breast, cubed
  • 1 tablespoon fresh ginger peeled and minced
  • 3 cups snow peas trimmed
  • 3 green onions chopped
  • 3 tablespoons unsalted cashews broken
  • Cooked rice

Optional:

  • Additional chile-garlic sauce

Instructions

  • In a small bowl, combine soy sauce, chile-garlic or curry sauce, rice vinegar, and toasted sesame oil.
  • Set aside.
  • Heat oil in a skillet over medium-high heat.
  • Add the cubed chicken and cook, stirring, until it is no longer pink in the center.
  • Add minced ginger to the skillet and cook for about 30 seconds.
  • Add snow peas and chopped green onions to the skillet.
  • Cook until the snow peas are just tender, about 2 to 4 minutes.
  • Pour the soy sauce mixture over the ingredients in the skillet.
  • Stir to coat well.
  • Stir in the broken cashews just before serving.
