Scallops and Avocado in Red Pepper Sauce

Along the Malecon (seaside walkway) in Mazatlán, there are a number of restaurants serving ocean-fresh seafood of all kinds. Eating scallop ceviche with avocado prompted me to create this version. I present the dish in an elegant new style.

Ingredients

Makes 4 servings

  • Red Bell Pepper Sauce
  • 1 large vine-ripened tomato peeled and chopped
  • 1 serrano chile chopped with seeds
  • 1 tablespoon olive oil
  • 8 sea scallops cut horizontally into 3 slices
  • ½ teaspoon salt or to taste
  • 3 tablespoons fresh lime juice
  • 2 ripe avocados Hass variety preferred, peeled and sliced lengthwise
  • Cilantro sprigs

Instructions

  • Prepare the bell pepper sauce, adding the tomato and the serrano chile to the blender when puréeing the sauce.
  • Strain the sauce as directed in the recipe.
  • Adjust salt.
  • Cover and refrigerate the sauce until cold.
  • In a large nonstick skillet, heat the oil over medium heat and cook the scallops, turning once, just until firm, (but do not brown), about 1 minute.
  • Transfer to a plate to cool.
  • Add salt and drizzle with half of the lime juice, turning to coat.
  • Drizzle the remaining lime juice on the avocado slices.
  • To serve, pour about ⅓ cup of the red pep- per sauce in the center of each of 4 salad plates.
  • Tilt the plates to pool the sauce.
  • Arrange the avocado slices equally on the sauce, in a fan shape, among the plates.
  • Arrange the scallops equally on top.
  • Garnish each plate with a sprig of cilantro.

Pickled Ancho Chiles Stuffed with Tuna

It was with enthusiastic amazement that I ate stuffed ancho chiles for the first time in a restaurant in the 1970s, when I ordered chiles rellenos and the dish arrived made with dried anchos instead of fresh green chiles. That day I learned a whole new way to use these dried red chiles. Several years later, I enjoyed them again in another classic dish as prepared by Chef Miguel Ravego of Austin, Texas. This recipe follows his technique. Serve as a first course salad.

Ingredients

Instructions

  • Wipe the chiles with a damp paper towel to remove dust.
  • In a hot dry skillet warm the chiles briefly until they soften and are pliable.
  • Slit the chiles down 1 side, seed, and devein, leaving the stems intact.
  • Reserve.
  • In a medium saucepan, bring to a boil the vinegar, water, brown sugar, bay leaf, allspice berries, and oregano.
  • Remove the pan from the heat.
  • Add the reserved chiles, fresh mint, and olive oil.
  • Cover and marinate at room temperature, turning gently once or twice, 6 to 8 hours.
  • About 1 hour before serving, mix the tuna, mayonnaise, and lime juice in a medium bowl.
  • Drain the chiles and discard the marinade.
  • Stuff the chiles equally with the tuna.
  • The marinated chiles are fragile, so handle very gently to prevent tearing them.
  • Place 1 stuffed chile on each of 4 serving plates.
  • Garnish with lettuce leaves.
  • Sprinkle with crumbled cheese and chopped cilantro.

Tuna-Stuffed Tomato Salad

To really enjoy this salad, choose the best vine-ripened tomatoes, and serve the salad for lunch or a light evening meal on a hot day. You can just mound the tuna on thick slices of deep red tomatoes, as is often done in Mexico, but I like to cut the tomatoes in a petal design and put the filling in the center.

Ingredients

Makes 4 servings

  • 4 large vine-ripened red tomatoes rinsed
  • 2 cans all-white albacore tuna drained
  • cup mayonnaise or more, to taste
  • 2 tablespoons drained capers
  • 1 to 2 jarred pickled jalapeño chiles en escabeche, seeded and minced
  • 4 cups finely shredded washed, and dried fresh spinach
  • 2 teaspoons olive oil
  • 1 teaspoon unseasoned rice vinegar
  • ¼ teaspoon salt
  • 1 tablespoon finely chopped parsley

Instructions

  • Cut the core out of the tomatoes.
  • Stand 1 tomato, cored side up, on a flat surface.
  • With a sharp knife, cut from the top straight down to within 1 inch of the bottom into evenly spaced 4 segments or into 8, if desired.
  • Gently spread open like petals.
  • Repeat until all are cut.
  • Set aside.
  • In a bowl, mix the tuna, mayonnaise, capers, and chiles.
  • In another bowl, toss the spinach, oil, vinegar, and salt together.
  • To assemble the salads, divide the spinach evenly among 4 serving plates.
  • Place 1 tomato in the center of each plate on the bed of spinach.
  • Spoon the tuna mixture equally inside each tomato cavity.
  • Sprinkle with chopped parsley.

Makes 4 servings

  • 2 cans solid white tuna drained
  • 1 15-ounce can chickpeas (garbanzo beans), drained and rinsed
  • 2 green onions finely chopped, including 3 inches of green
  • 2 jarred pickled jalapeño chiles en escabeche, seeded and chopped
  • 2 medium tomatoes seeded and finely chopped
  • ¼ cup lightly packed chopped cilantro or parsley
  • 3 tablespoons olive oil
  • tablespoons unseasoned rice vinegar
  • 2 teaspoons fresh lime juice
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt or to taste

Instructions

  • In a large bowl, break up the tuna into small pieces with a fork.
  • Add all of the remaining ingredients and toss to mix.
  • The salad can be covered and refrigerated up to 4 hours for best flavor.

Nopales are the tender young paddles of the cactus plant, with a flavor somewhat like green beans. Fresh cactus can be found in Mexican markets, and more recently, in many supermarkets. Often, fresh cactus is de-thorned, and cut into pieces ready to use. Cut cactus is sold canned or in jars. I don't recommend the canned, because they are soft and lack flavor, but cactus packed in jars is convenient and works well for salads. Use cactus strips packed in jars with only water and salt

Ingredients

Makes 4 servings

  • 1 can all-white albacore tuna drained
  • 2 cups cactus strips drained, rinsed, and diced
  • 2 medium tomatoes diced or coarsely chopped
  • 4 cups torn iceberg lettuce
  • 2 tablespoons chopped fresh cilantro or parsley
  • 3 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • ½ teaspoon salt or to taste
  • teaspoon freshly ground pepper or to taste
  • 2 hard-cooked eggs peeled and quartered lengthwise
  • ¼ cup crumbled cotija or mild feta cheese

Instructions

  • In a large bowl, put all of the ingredients, except the eggs and cheese.
  • Toss well to mix.
  • Taste for salt.
  • Divide the salad among 4 serving plates.
  • Garnish each salad equally with the egg wedges, and sprinkle with cheese.

Corn tortillas fried until crisp and golden brown are the base for tostadas that are piled high with almost anything. These tostadas are topped with a spicy crab salad. The oceans along Mexico's long coastline provide several species of crab; use whatever fresh crab is available in your area.

Instructions

  • Prepare mayonnaise, if using.
  • Then, in a medium skillet, heat vegetable oil to a depth of about ½ inch.
  • Fry the tortillas, 1 at a time, turning, until crisp and golden brown on both sides.
  • Drain on paper towels.
  • (This can be done ahead.
  • )
  • In a large bowl, stir together the tomato, avocado, onion, serrano chile, cilantro, and lime juice.
  • Add the crabmeat and salt.
  • Toss gently to combine.
  • To assemble, put 1 crisp tostada on each of 4 plates, and divide the lettuce equally among the tostadas.
  • Spoon the crab mixture equally on top.
  • Add a dollop of chipotle mayonnaise and serve at once.

Pale green honeydew melon and Mexican papaya—larger than Hawaiian with a flat football shape, and a color range of sunset pink to reddish orange—are really striking served together. La Cava restaurant in Mexico City served a lovely salad like this with tiny bay shrimp.

Ingredients

  • ½ ripe honeydew melon
  • ½ medium Mexican papaya or whole Hawaiian papaya
  • 2 tablespoons fresh lime juice
  • 2 teaspoons vegetable oil
  • ½ teaspoon sugar
  • ¼ teaspoon salt or to taste
  • ½ pound 36 to 40 cooked small shrimp
  • Parsley sprigs

Instructions

  • Scoop out the melon seeds.
  • Peel the melon and halve lengthwise.
  • Slice the melon crosswise 1⁄2-inch thick and put in a large shallow bowl or pie plate.
  • Discard papaya seeds and peel.
  • Slice the papaya crosswise 1⁄2-inch thick, and put in the bowl with the melon.
  • In a small bowl, whisk together the lime juice, oil, sugar, and salt.
  • Spoon over the fruit and turn gently to coat with the dressing.
  • Let stand about 10 minutes.
  • Arrange the melon and papaya equally among 4 serving plates.
  • Scatter the shrimp equally over the fruit.
  • Garnish the salads with parsley sprigs.

Hearts of Palm and Shrimp Salad

Ensalada de Palmitos y Camarónes
Hearts of palm are slender and ivory colored and come from the inner core of a species of palm tree that grows in many tropical regions of Mexico. The flavor is mild and pleasant, somewhat like artichoke hearts. Fresh hearts of palm are a rarity, but canned ones are very good, especially if they are rinsed and soaked well to lessen any "tinny taste". Hearts of palm and tiny pink shrimp are an elegant combination to serve as a first course in this contemporary presentation.

  • 1 14-ounce can hearts of palm, drained and rinsed
  • ½ pound 36 to 40 cooked small shrimp, cut in half crosswise
  • 1 serrano chile minced with seeds (wear protective gloves)
  • 2 tablespoons mayonnaise
  • ¼ teaspoon salt or to taste
  • 2 medium tomatoes each cut into 8 wedges
  • Parsley sprigs

Instructions

  • In a medium bowl of warm tap water, soak the hearts of palm for 10 minutes to remove any “tinny” taste.
  • Drain very well and chop coarsely.
  • Add the shrimp, serrano chile, mayonnaise, and salt.
  • Mix well.
  • Pack ½ cup in a flat-bottomed measuring cup or ramekin and invert to unmold onto an individual serving plate.
  • Place 4 tomato wedges around the shrimp.
  • Repeat to make 4 servings.
  • Garnish each plate with parsley.

Mixed greens topped with segments of pink grapefruit, sliced avocado, and cooked bay shrimp make a lovely luncheon salad that's adapted from a recipe by Patricia Quintana, a cookbook author and cooking instructor from Mexico City. Patricia used grapefruit juice or sour Seville orange juice in her dressing. I include segments of the grapefruit as well as the juice, and I also use small cooked shrimp in place of large shrimp.

Ingredients

  • 2 pink grapefruit peeled and white pith cut away (juices reserved)
  • 5 cups mixed baby greens or salad greens of choice
  • 1 tablespoon slivered fresh mint
  • 2 tablespoons olive oil
  • 2 teaspoons unseasoned rice vinegar
  • 2 teaspoons grapefruit juice from cutting the grapefruit
  • ½ teaspoon salt or to taste
  • 1 large avocado Hass variety preferred, peeled and thinly sliced
  • ½ pound 36 to 40 cooked small shrimp
  • 8 to 12 whole radishes washed with some leaves attached

Instructions

  • Cut the grapefruit from between the membranes into segments (over a bowl to catch juices).
  • Reserve the segments on a plate.
  • In a large bowl, toss together the greens, mint, oil, vinegar, the two teaspoons grapefruit juice, and the salt.
  • Divide the greens among 4 plates.
  • Arrange the grapefruit, avocado, and shrimp on top.
  • Garnish each plate with radishes.
  • Serve at once.
