El Sacromonte in Guadalajara is an elegant restaurant that serves inventive and gorgeously presented nueva cocina (new-style cooking) dishes. We were really impressed with this fancy first course, formed in a ring with a crown of shrimp on top, and wanted to reproduce it at home. Donna Nordin, my good friend, traveling partner, and the owner-chef of Café Terra Cotta in Arizona, developed this recipe. It's as good as we remembered.Cuitlacoche, a kind of mushroom that grows on corn in the rainy season, is available in cans in some Mexican markets. Adelita or Herdez brands are both good. For the ring, use an empty 6-ounce tuna fish can, opened on both ends and thoroughly washed.

Ingredients

Makes 4 servings

Instructions

  • Rub a film of oil on the inside of the “ring” to form the layers of rice and avocado.
  • Reserve.
  • Preheat oven broiler.
  • Brush each shrimp with oil and place the shrimp on a baking sheet.
  • Sprinkle lightly with salt.
  • Broil the shrimp until pink and curled, 2 to 3 minutes.
  • Reserve refrigerated.
  • Coarsely chop the cuitlacoche in a food processor and scrape into a bowl.
  • Put the chicken broth, rice, salt, and about 2 tablespoons of the cuitlacoche in a saucepan and bring to a boil.
  • Reduce the heat to low, cover, and simmer for 20 minutes, or until the liquid has evaporated and the rice is tender.
  • Remove the pan from the heat and stir in the remaining cuitlacoche.
  • Cool to room temperature.
  • Meanwhile, mash the avocados with the lime juice.
  • Season with salt and pepper.
  • Set aside.
  • To serve, place the ring in the center of a serving plate.
  • Hold the ring in place with one hand and spoon in rice to ¾ full, pressing down with the back of the spoon.
  • Spoon avocado on top of the rice to fill the ring, spreading it flat.
  • Slide the ring straight up to remove.
  • Crown the top with 3 shrimp.
  • Place a long sprig of cilantro in the center.
  • Carefully spoon the diced tomato around the rice.
  • Wipe out the ring, and rub with oil.
  • Repeat for the other 3 servings.

Years ago, during a visit in late Spring to Guadalajara when fresh fava beans were in season, I was fascinated by the baskets and boxes brimming with fresh fabas (broad beans or fava beans) for sale in the public market.At that time, fresh fava beans were a novelty to me, but now many supermarkets and farmer's markets in the United States feature them when in season. Fresh fava beans must be shelled, just like peas, and then boiled for a few minutes. The thin outer skin is then removed to reveal the bright green, mild-tasting bean inside. Modern chefs love to use them in salads or as a garnish on artistically presented plates. For this salad the beans are marinated and served cold

  • In a pot of boiling salted water, cook the shelled fava beans until crisp-tender, 12 to 15 minutes.
  • Drain and rinse under cold running water.
  • Remove the thin outer skin by pinching the beans.
  • The skins usually slip off quite easily.
  • Put the peeled beans in a large bowl.
  • Add all of the remaining ingredients, except the lettuce.
  • Toss to mix.
  • Adjust the seasoning.
  • Add the lettuce and toss again.
  • Divide among 4 serving plates.

Chickpeas (garbanzos in Spanish) are widely used throughout Mexico in soups, stews, salads, and even in sweet cakes. Canned chickpeas are fine for this salad, but vine-ripened tomatoes are important for the best flavor. Queso fresco (fresh Mexican cheese) is available in many supermarkets.

  • Prepare the pickled red onion and let marinate at least 1 hour.
  • Reserve in a small bowl.
  • In a large bowl combine the chickpeas, tomatoes, vinegar, salt, olive oil, and pepper.

  • Toss gently to mix.

Ingredients

Makes 6 servings

  • 4 fresh Anaheim chiles roasted, peeled, seeded, and veins removed
  • 2 15-ounce cans chickpeas (garbanzo beans), drained and rinsed
  • 2 medium tomatoes cored and finely chopped
  • ½ cup loosely packed chopped fresh cilantro
  • 2 tablespoons finely chopped red or white onion
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon unseasoned rice vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon ground cumin
  • ½ teaspoon salt or to taste
  • teaspoon freshly ground pepper or to taste

Lupe Fregoso, a friend all through my school days, invited me to have lunch in her home when we were about nine years old. It may have been my first taste of Mexican food. Although I have long forgotten what else we had, I vividly remember the bean salad, and soft, warm, corn tortillas that we ate with the salad as you would a piece of bread. The Fregoso family was from the state of Jalisco, near Guadalajara, and the salad probably reflected what native ingredients were available to her family in our northern California home. Although authentic Mexican ingredients are now more readily available, this simple salad, based on memory, is good even today, especially with the warm tortillas.

Ingredients

Makes 4 servings

  • 4 cups chopped or torn lettuce such as iceberg or romaine
  • 1 cup cooked and drained red kidney beans canned or homemade
  • 1 medium tomato chopped
  • 2 green onions finely chopped
  • ½ teaspoon ground cumin
  • ¼ teaspoon salt or to taste
  • teaspoon freshly ground pepper or to taste
  • 1 tablespoon mayonnaise
  • 2 to 3 jarred pickled jalapeño chiles en escabeche, seeded, veins removed, and cut into thin strips

Instructions

  • Put all of the ingredients in a large bowl, except the mayonnaise and chiles.
  • Gently mix in the mayonnaise.
  • Add the chiles to the salad, or put the strips of jalapeños on a small plate to be eaten at the table, if desired.

Although beans have been part of Mexican meals for centuries—usually served hot with or after a meal—only recently have they been used to make delectable salads. Black beans are an excellent salad choice.To help the beans hold their shape while cooking, I use a cook-soak method allowing the starches to expand slowly, keeping the skins intact. If you pay attention to the cooking, the beans should be whole and tender when finished.

Ingredients

Makes 8 servings

Instructions

  • Sort the beans.
  • Remove any dirt, straw, pebbles, etc.
  • Put the beans in a fine-mesh strainer and rinse well, then put them into a large pot with water to cover by about 3 inches.
  • Add the bay leaves and oregano.
  • Bring to a boil, uncovered.
  • Lower the heat and simmer, uncovered, 10 minutes.
  • Turn off the heat.
  • Cover and soak 30 minutes.
  • Bring to a boil again, and simmer slowly, partially covered, until the beans are tender, but not too soft, about 1 hour to 1 hour and 20 minutes.
  • Drain off the bean broth and save for soup, if desired, or discard.
  • Put the beans into a large mixing bowl.
  • Cool to room temperature.
  • Add the remaining ingredients and mix gently.
  • Cover and refrigerate at least 1 hour.
  • Adjust seasoning.

Cold fish salad called salpicón is quite typical along the Veracruz seacoast. The fish is cooked, shredded, and combined with vegetables and a salsa or dressing. Any firm white fish may be used for this delicious salpicón. Serve as a first course with crusty rolls.

Ingredients

Makes 4 small servings

  • Avocado and Tomatillo Sauce
  • 1 pound boneless fish fillets such as halibut or sea bass
  • ¼ white onion sliced
  • 2 garlic cloves peeled and thinly sliced
  • 2 sprigs parsley
  • ½ teaspoon salt
  • 1 medium carrot peeled, finely diced, and boiled for 2 minutes
  • 1 medium tomato cored, seeded, and diced
  • 1 to 2 jarred pickled jalapeño chiles en escabeche, seeded, veins removed, and very thinly sliced
  • 2 tablespoons chopped fresh cilantro

Instructions

  • Prepare the avocado-tomatillo sauce.
  • Cover and reserve in a bowl.
  • Pour 1½ cups water in a skillet large enough to hold the fish in one layer.
  • Add the onion, garlic, parsley, and salt.
  • Bring to a boil over medium heat and cook 3 minutes.
  • Add the fish and cook, turning after 5 minutes.
  • Continue cooking 3 to 5 minutes more or until the fish is opaque in the thickest part.
  • Remove the fish and cool completely; then break the fish apart by hand into small pieces, and put in a bowl.
  • Add the cooked carrot and about ½ cup of the avocado salsa to the bowl.
  • Toss gently to mix.
  • Adjust salt.
  • Mound the fish on a round serving plate.
  • Scatter the tomato, jalapeños, and cilantro over the top.

Serve cold; pass the remaining avocado salsa at the table.

For years I watched others enjoy octopus in salads and seafood cocktails, until I finally tasted an octopus salad in Merida, and I enjoyed its mild and pleasant flavor.Specialty fish markets often carry cleaned fresh or frozen octopus. Young, small octopus, about 1H to 2 pounds, is the most tender and desirable. Small whole octopus should cook slowly for about one hour for the best texture.

Instructions

  • In a large saucepan, bring about 2 quarts water to a boil.
  • Add the octopus and ½ teaspoon of the salt.
  • Cover, and simmer over medium-low heat until tender, about 45 minutes to 1 hour.
  • Drain and cool the octopus; then cut into 3⁄4-inch pieces and put into a large bowl.
  • Add the oil, lime juice, vinegar, the remaining ½ teaspoon of salt, and pepper.
  • Stir to mix.
  • Cover and refrigerate at least 1 hour and up to 6 hours.
  • Shortly before serving add the tomatoes, onion, jalapeños, garlic, cilantro, and avocado.
  • Toss gently.
  • Make a bed of lettuce on a platter.
  • Mound the salad on the lettuce.

  • 2 teaspoons Dijon mustard
  • 2 tablespoons unseasoned rice vinegar
  • 2 tablespoons fresh orange juice
  • 3 tablespoons olive oil
  • ½ teaspoon salt or to taste
  • 4 spiny or Pacific uncooked lobster tails thawed, if frozen
  • 4 cups finely shredded romaine lettuce
  • 1 ripe avocado Hass variety preferred, peeled and cut into 3⁄4-inch dice
  • Tomato wedges or cherry tomatoes

Instructions

  • In a small bowl, whisk together the mustard, vinegar, and orange juice.
  • Gradually whisk in the oil.
  • Season with salt and pepper.
  • Reserve.
  • Bring a large pot of salted water to a boil.
  • Add the lobster tails and cook 8 minutes.
  • Cool in cold water.
  • Drain; then cut the shells open and remove the meat.
  • Cut the lobster meat crosswise and put into a bowl.
  • Mix lobster with 1½ tablespoons of the reserved dressing and set aside.
  • In another bowl, mix the greens and avocado with the remaining dressing.
  • Adjust salt.
  • Divide the salad among 4 serving plates.
  • Arrange the lobster meat evenly on top of each salad.
  • Garnish with tomato wedges.
  • Serve.

  • ¾ pound about 80 tiny bay scallops
  • 1 tablespoon plus 2 teaspoons fresh lime juice
  • 4 cups finely shredded romaine lettuce
  • 1 large avocado Hass variety preferred, peeled and cut into 1⁄2-inch dice
  • 1 orange peeled and cut into 1⁄2-inch pieces
  • 1 serrano chile stemmed and finely chopped with seeds
  • 2 tablespoons chopped fresh cilantro
  • 3 teaspoons light olive oil or vegetable oil
  • 1 teaspoon white wine vinegar
  • ½ teaspoon salt or to taste

Instructions

  • In a medium saucepan, bring about 1 quart of water to a boil.
  • Add the scallops, reduce the heat to low, and cook the scallops until just opaque throughout, 45 to 50 seconds.
  • (Do not overcook.
  • ) Cool under running water.
  • Drain well, and put in a bowl.
  • Stir in 1 tablespoon of the lime juice.
  • Set aside.
  • In a large bowl, put the lettuce, avocado, orange, serrano, cilantro, and the reserved scallops.
  • Add the remaining 2 teaspoons of lime juice, oil, vinegar, and salt.
  • Toss gently to coat the salad with the dressing.
