  • Place the halved cherry tomatoes in a colander and season generously with kosher salt. Leave them to drain for 10 minutes. Arrange the tomatoes cut-side up in a round cake pan, 7-inch, metal cake pan or foil pan. Drizzle with the maple syrup followed by the vegetable oil. Sprinkle with the thyme leaves and minced garlic, then season with freshly ground black pepper. Place the pan in the air fryer and cook at 165°C for approximately 20 minutes, until the tomatoes are soft, collapsed and lightly caramelized. Serve directly from the pan or transfer to a serving plate and spoon the cooking juices over the tomatoes.

Sticky Maple Tomatoes transform fresh cherry tomatoes into intensely flavoured little bites with a combination of maple syrup, thyme, garlic and gentle air-fryer heat. As the tomatoes cook, they soften and lose moisture while their natural sugars combine with the maple syrup to create a lightly caramelized finish. The result works equally well as a Side Dish, salad topping or savoury snack.

The inspiration for this preparation comes from maple-roasted tomatoes traditionally cooked slowly for several hours. Using the Airfryer dramatically shortens that process. The tomatoes still become soft and concentrated, but they are ready in around 20 minutes rather than requiring hours of slow roasting.

Why Drain the Tomatoes First?

Cherry tomatoes contain a considerable amount of water. Salting the cut tomatoes and leaving them in a colander for 10 minutes draws some of that moisture to the surface. This gives the air fryer less liquid to evaporate and helps concentrate the tomato flavour.

Arrange the tomatoes cut-side up after draining. This exposes their juicy interiors directly to the circulating heat and allows the maple syrup to remain on the surface instead of immediately running away from the tomatoes.

Maple Syrup and Tomatoes

Maple syrup may sound unusual with tomatoes, but tomatoes already contain natural sugars and acidity. A small amount of maple syrup strengthens their sweetness while the acidity keeps the finished dish from tasting like a dessert.

Fresh thyme and garlic move the flavour firmly back towards the savoury side. Black pepper adds a little warmth, while the vegetable oil helps the tomatoes roast and carries the flavours of the herbs and garlic.

Air Frying in a Small Pan

A small pan is essential because the tomatoes release flavourful juices while cooking. A round cake pan, metal pan or foil pan keeps those juices together with the maple syrup and oil instead of allowing them to drip through the air fryer basket.

During cooking, the tomatoes gradually collapse and the liquid becomes more concentrated. They are ready when their shape has softened considerably and the exposed surfaces show light caramelization. Different air fryers can cook at slightly different rates, so check them near the end of the stated cooking time.

Ways to Serve Sticky Maple Tomatoes

These tomatoes can accompany grilled chicken, beef, pork or other Vegetables. They also make an excellent addition to grain bowls and salads because both the tomatoes and their cooking juices can be spooned directly over the other ingredients.

I helped my friend Andy Baraghani, a senior food editor at Bon Appétit, prep and cater a fund-raiser one summer, and he had me grill whole zucchini until it was blackened all over, like a roasted chile pepper, then break it up into bite-size pieces, then season it with salt and pepper. Seasoning the zucchini after cooking really concentrated the smoky char flavor that the grill imparted. I adapted that technique here, using the air fryer’s high heat to lightly char the zucchini before tearing them into pieces and serving them atop a quick, tangy herb sauce made with spicy kimchi that highlights the concentrated brightness of this humble squash.

Years ago while working in the test kitchen of Saveur magazine, I fell in love with a technique for cooking eggplant that involved deep-frying small pieces until caramelized and tender. The process produced an ethereally smooth, custard-like texture in the eggplant, but also made it pretty greasy, something I just dealt with by dabbing at it with what seemed like an entire roll of paper towels. I was so happy when I tried that same technique in the air fryer, and this has become one of my favorite recipes in the book.   • In a bowl, toss together the eggplant and oil, season with salt and pepper, and toss to coat evenly.
  • Transfer to the air fryer and cook at 400°F, shaking the basket every 5 minutes, until the eggplant is caramelized and tender, about 15 minutes.
  • Meanwhile, in a small bowl, whisk together the yogurt, harissa, and garlic, then spread onto a serving plate.
  • Pile the warm eggplant over the yogurt and drizzle with the honey just before serving.

Notes & Wine Advice

Harissa is a spicy, slightly smoky condiment that hails from North Africa. If you can’t find it, simply substitute 2 tablespoons tomato paste mixed with 1 tablespoon chili powder and ¼ teaspoon cayenne pepper.
