Whole roasted cauliflower has, for me anyway, transcended its fad stage, remaining a go-to for an impressive weeknight dinner. Its relatively bland flavor is a perfect canvas for strong, bold additions, like this Caesar salad dressing–inspired marinade. Made with Worcestershire sauce, Dijon mustard, and garlic, it hits all the flavor notes you want in a Caesar salad, but without the lettuce.

  • In a liquid measuring cup, whisk together the olive oil, vinegar, Worcestershire, parmesan, mustard, garlic, anchovies, and salt and pepper to taste.
  • Place the cauliflower head upside down on a cutting board and use a paring knife to make an “x” through the full length of the core.
  • Transfer the cauliflower head to a large bowl and pour half the dressing over it.
  • Turn the cauliflower head to coat it in the dressing, then let it rest, stem-side up, in the dressing for at least 10 minutes and up to 30 minutes to allow the dressing to seep into all its nooks and crannies.
  • Transfer the cauliflower head, stem-side down, to the air fryer and cook at 340°F for 25 minutes.
  • Drizzle the remaining dressing over the cauliflower and cook at 400°F until the top of the cauliflower is golden brown and the core is tender, about 5 minutes more.
  • Remove the basket from the air fryer and transfer the cauliflower to a large plate.
  • Sprinkle with the parsley, if you like, and serve hot.

Notes & Wine Advice

Go Basic:
If you want to cook a plain roasted whole cauliflower, simply rub it with the olive oil, season all over with salt and pepper, and cook at 340°F for 30 minutes.

  • Thinly slice the potatoes crosswise, letting the chopstick or spoon handle stop the blade of your knife, and stop ½ inch short of each end of the potato.
  • Rub the potatoes with 1 tablespoon of the olive oil and season with salt and pepper.
  • Place the potatoes, cut-side up, in the air fryer and cook at 375°F until golden brown and crisp on the outside and tender inside, about 40 minutes, drizzling the insides with 1 tablespoon more olive oil and seasoning with more salt and pepper halfway through.
  • Meanwhile, in a small blender or food processor, combine the remaining 3 tablespoons olive oil, the chives, parsley, walnuts, parmesan, lemon juice, and garlic and puree until smooth.

  • Remove the potatoes from the air fryer and transfer to plates.
  • Drizzle the potatoes with the pesto, letting it drip down into the grooves, then dollop each with sour cream and serve hot.

Switch It Up:
Flavor the outside of the potatoes with your favorite dried herbs or spice mix and serve them with your favorite toppings. For a Tex-Mex spin, spice the outside of the potatoes with cumin and coriander, then serve them with salsa, guacamole, and sour cream. Or for a new-fangled loaded potato, serve the potatoes with cooked bacon stuffed into the cuts and topped with grated cheddar, sliced scallions, and a dollop of sour cream topped with chopped chives.

Some people may scoff at making a mole in less than 10 minutes—and I’m by no means comparing this one to the slow-simmered, traditional moles of Puebla—but for a weeknight meal, it hits all the right spicy-sweet-nutty notes that you’d want from a mole sauce. The cauliflower gets a head start in the air fryer to make sure the florets are tender by the time the sauce comes into play, then it’s only 5 minutes more until dinner.   • In a bowl, combine the rice, broccoli, vegetable oil, and sesame oil.
  • Season with salt and pepper and toss to coat evenly in the oils.

When I was growing up in the South in the ’90s, blackened red snapper was the trendy fish preparation, especially in and around New Orleans, where it was popularized by the legendary chef Paul Prudhomme. Most everyone used Chef Paul’s store-bought, premade blackening seasoning, and it’s good, but it never hurts to have a from-scratch recipe ready to go for when you want to control the type and amount of spices. This is my take, put to good use in this air-fried version, which cooks up moist and is enjoyed with a cooling, tangy rémoulade sauce. Serve it up over cooked grits or roasted potatoes for a simple take on this old-school NOLA classic.

The beef cooks up in the sauce until it’s reduced and glazed all over—the perfect quick weeknight meal to serve over rice.

This recipe is, perhaps, the one I’m most proud of because it’s so impressive. Instead of spending hours in an oven, air fry a sirloin roast, here crusted in crushed coriander seeds and black peppercorns, and have perfectly cooked roast beef ready for guests in about an hour. Even better, save the whole roast or any leftovers for later to make deli-style roast beef sandwiches (it’s much easier to get thin slices once the beef is chilled).

  • Combine the coriander seeds and peppercorns in plastic bag and crush with a heavy skillet or rolling pin until just cracked open (or use a mortar and pestle).
  • Mix in the oil and salt and stir to form a spice paste.
  • Spread the paste evenly all over the beef.
  • Transfer the beef roast to the air fryer and cook at 325°F, turning the roast every 10 minutes, until golden brown and an instant-read thermometer inserted into the middle of the roast reads 125° to 130°F, about 40 minutes.
  • This temperature is for medium-rare doneness, the ideal temperature for roast beef.
  • Transfer the beef roast to a cutting board and let rest for at least 15 minutes.
  • Cut the beef into thick slices and serve warm.
  • If not eating right away or to make sandwiches, wrap the cooled roast in plastic wrap and refrigerate until firm to help in getting thin slices of meat, at least 4 hours and up to 5 days.

Switch It Up:
This method of cooking beef works no matter what the flavorings are on the outside, so if you don’t have coriander or don’t like the flavor, simply leave it off or substitute another crushed seed like fennel seeds, cumin seeds, or white and pink peppercorns.
