Simple Sangria

Sangria is your chance to be creative with whatever fruit is in season. I really love to use stone fruits like peaches and nectarines, but berries or even ripe persimmons also work nicely. These two sangrias are meant to serve six to eight people, but they go down easy and fast. You may want to consider doubling the recipe if you have room in your refrigerator.

Ingredients

Serves 6 to 8

  • Simple Sangria
  • 1 750-ml bottle dry rosé wine
  • 1 cup gin I prefer Nolet’s Silver
  • 1 cup Aperol
  • ½ cup orange blossom honey
  • 2 lemons sliced
  • 1 orange sliced
  • 2 grapefruits sliced
  • 1 apple cored and sliced
  • 1 pear cored and sliced
  • Soda water
  • Fresh mint for garnish
  • Edible flowers for garnish optional

Instructions

It helps to know: This sangria sits overnight.

  • Pour the rosé, gin, Aperol, and honey in a large sealable container and stir to combine.
  • Add the fruit and let it rest overnight in your refrigerator.
  • To serve, ladle the sangria into wineglasses and top with a splash of soda water.
  • Garnish with the mint, edible flowers, and a few pieces of the macerated fruit.

  • 1 cup rhum agricole preferred or Plantation 3 Star rum (more traditional)
  • ½ cup gum syrup
  • ¾ cup freshly squeezed lime juice

Ti’ Punch

Ti’ Punch

This is a true Tuesday-at-the-Pink-Palace kind of beverage: it’s strong enough to only drink on my day off, and it has a way of making me feel like I’m on vacation, even on my “Sunday” night. I’ve made this drink according to how I’ve seen bartenders make it in the Caribbean, with one exception. On the islands, a Ti’ Punch is served at room temperature, which is varsity-level when it comes to this cocktail. Drink that for a while, and you’ll forget the name of your children. Unless I’m on vacation, I serve mine over a big ice cube and sip it slowly while the ice cube melts.

Ingredients

  • Serves 2
  • 1 lime
  • 6 ounces rhum agricole
  • ½ ounce cane syrup
  • 2 large ice cubes

Instructions

  • Set the lime on its side and slice off two opposite sides lengthwise, leaving about 1 inch of the lime’s center left over.
  • Cutting it this way prevents the larger cells in the center of the lime from getting into the drink, and I like the flavor of a more rind-heavy Ti’ Punch.
  • Squeeze the two lime slices into a mixing glass.
  • Add them to the glass and gently muddle the rind.
  • Add the rhum and cane syrup and continue to muddle and mix until combined.
  • Put two large ice cubes into two serving glasses.
  • Divide the punch between the two glasses, pouring it over the ice.
  • Slice a couple of small rind pieces from the remaining lime.
  • Squeeze over the top of the drink, then add the rinds to the drink as a garnish.
  • Serve.

What I love about this granita is that it’s refreshing on a hot day, but what’s even more interesting is how incredibly fragrant it is, especially for a cold dessert. Be sure to use almond paste that contains only 50 percent sugar so it’s not too sweet.

Equipment

Ingredients

  • Serves 8 to 10
  • cups almond paste made with 50 percent sugar
  • cups whole milk

Instructions

  • Scrape the almond paste into your blender.
  • In a small pan on high heat, bring the milk to a simmer.
  • Pour the simmering milk over the almond paste and blend on low speed until the milk and paste are fully incorporated.
  • Pour the mixture into a shallow container and place in your freezer.
  • Stir every 10 minutes with a fork to keep the solids from settling to the bottom before the liquid starts to freeze, about 1 hour.
  • Cover the container and leave it in the freezer until the granita has turned to solid ice, at least 2 hours.
  • Don’t rush this step; the ice needs to be rock solid or the dish won’t work.
  • About 10 minutes before serving, chill your serving glasses in the freezer.
  • Use a sturdy fork like a rake to scrape the ice into a pile at the bottom of the container.
  • Scoop the ice into a chilled serving glass, then return the glass to the freezer as you prepare the other glasses (don’t stress too much; it’s still delicious if it’s slightly melted).
  • Serve immediately.
