  • 4 fresh chicken schnitzels approximately 6ยฝ ounces each
  • Olive oil cooking spray
  • 1 tablespoon zaโ€™atar spice blend
  • 2 tablespoons red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 1 clove garlic crushed
  • 12 trimmed red or watermelon radishes thinly sliced
  • 8 ounces cherry tomatoes halved
  • 8 ounces baby cucumbers thinly sliced
  • 2 cans chickpeas 15 ounces each, drained and rinsed
  • ยฝ cup fresh dill sprigs
  • 4 pita breads warmed
  • Hummus and lemon wedges for serving

Instructions

  • Preheat your air fryer to 350หšF for about 3 minutes.
  • Spray the chicken schnitzels generously with olive oil, then sprinkle them with the zaโ€™atar spice blend.
  • Carefully place the schnitzels in the air fryer basket, then slide it back into the appliance.
  • Keep the temperature set at 350หšF and set the timer for 12 minutes, cooking until the chicken is cooked through.
  • Once done, transfer the cooked schnitzels to a cutting board and let them rest for 5 minutes before slicing them thickly.
  • In a bowl, combine the red wine vinegar, extra virgin olive oil, honey, and crushed garlic.
  • Season with salt and pepper to taste.
  • Add the sliced radishes, cherry tomatoes, cucumbers, chickpeas, and dill.
  • Toss gently to combine.
