Even though this recipe allows you to cook the fish quickly you will need to allow plenty of time for the fish to marinate. At least 2 hours should be sufficient time. If you can use any fish with firm flesh to make your kebabs from. Swordfish is ideal.
In a bowl combine together the olive oil, garlic, coriander, cumin, lemon juice, salt and pepper, then place to one side, as this is the marinade for the fish.
