Ingredients
- ยผ medium avocado ripe, peeled, pitted and diced
- ยฝ teaspoon coconut aminos
- 1ยฝ tablespoons cucumber diced
- 4 large eggs
- 1 cup ice cubes
- ยผ cup lump crabmeat shells discarded
- 1ยฝ tablespoons mayonnaise
- 1 sheet nori sliced
- 8 slices pickled ginger jarred
- 1 teaspoon sesame seeds toasted
- ยผ teaspoon wasabi powder
- 1 cup water
Instructions
- Preheat the air fryer to 120ยฐC for 3 minutes.
- Place the eggs in silicone muffin cups to prevent them from moving around and cracking during cooking.
- Place the silicone cups in the air fryer basket and cook the eggs for 15 minutes.
- Combine the ice cubes and water in a medium bowl.
- Immediately transfer the cooked eggs to the ice-water bath and leave for 5 minutes.
- Carefully peel the eggs and cut them in half lengthwise.
- Remove the yolks and place them in a medium bowl. Arrange the egg-white halves on a large plate.
- Mash the egg yolks with the mayonnaise, coconut aminos, avocado and wasabi powder until smooth.
- Fold in the diced cucumber.
- Spoon the filling evenly into the egg-white halves.
- Top with the crabmeat, sliced nori and pickled ginger.
