Veggie Sausage Casserole

Ingredients
- 6 sausages vegetarian
- 1 red onion chopped
- 1 tablespoon oil vegetable or olive
- 400 g tomatoes canned and chopped
- 3 red capsicums roasted, jarred and sliced
- 400 g beans borlotti or cannellini, canned, drained and rinsed
- 1 teaspoon red wine vinegar
- 1 dash Worcestershire sauce
- 1 teaspoon mixed herbs dried
- Sea salt flakes to taste
- Black pepper freshly ground, to taste
Instructions
- Preheat the air fryer to 180ยฐC.
- Cook the vegetarian sausages in the air fryer for 5 minutes.
- Toss the red onion with the oil, add it to the air fryer and cook for a further 5 minutes.
- Combine the cooked sausages and onion with the chopped tomatoes, roasted red capsicums, beans, red wine vinegar, Worcestershire sauce and mixed dried herbs in a heatproof dish that fits inside the air fryer. Season with sea salt and black pepper.
- Cook directly in the air fryer drawer if your appliance is suitable for cooking casseroles without a separate dish.
- Cook for 20 minutes, or until the sausages are cooked through and the sauce has thickened slightly.
- Serve hot with an extra grinding of black pepper.
